♡homemade jammy dodgers♡

Hiya! Sorry for posting so constantly but I wanted to share with you this delicious recipe. I love making homemade versions of things and I hope you try them out and love them too.


MAKES ABOUT 22 COOKIES

Ingredients:
• 225g of softened butter
• 140g of caster sugar plus extra for decoration
• 1 egg yolk
• 1 egg white
• 2tsp of vanilla extract
• 280g of plain flour
• a pinch of salt

• 5 tbsp strawberry jam
• 55g butter
• 100g icing sugar

• mix together the butter and sugar well
• beat in the egg yolk and vanilla extract
• sift the flour and salt into the mixture and stir in thoroughly until well combined into a dough
• halve the dough and wrap in clingfilm. Let it chill in the fridge for 30-60 minutes

• preheat the oven at 190°C/375°F/gas's mark 5
• line two baking sheets with parchment
• unwrap the dough and roll it out so its not too thin but not too thick
• cut out shapes using a plain circle or a fluted circle cutter and do this until all the dough is used
• place half of the circles on the baking trays and with the other half cut out a heart or whatever shape you like using a smaller cutter in the middle of the cookie
• place the rest if the cookies on the baking trays and bake for 7 minuits
• take the cookies out and brush the cookies with the hole in them with the egg white and extra caster sugar
• bake for a further 5-8 minutes until golden brown

• take the cookies out to cool for 5-10 minutes
• if you just want jam then spread it on the whole cookies and put the cookie with a hole on top but if you want to add buttercream then mix the butter and icing sugar and spread it on the whole cookie before adding the jam and sandwiching the cookies in one big hug of yummy love!
